| If you follow a specialized diet due to food allergies or other concerns, it can be difficult to find cakes that fit your needs. Since I bake entirely from scratch, I am able to control the ingredients that go into each cake that I make. Please note that all of my cakes are produced in a kitchen that also processes nuts, wheat, soy and dairy. It's up to you to decide whether that's okay for you or if you should avoid it. I take every precaution that I can when baking for clients with allergies, but I don't have a dedicated area for allergen-free baking, so the decision has to be up to you. Vegan/vegetarian/organic I can substitute vegan products for dairy products, so vegan cakes aren't a problem. Organic cakes just require organic ingredients, so I can provide those as well. Diabetes I don't do sugar-free cakes, but I can do reduced sugar for some of my formulas. I haven't been able to find any sugar substitutes that still taste okay after being heated, so I don't use any splenda, saccharin, etc. My meringue buttercream has substantially less sugar than the shortening-based icing that most people are used to, so that would be an option if you want to reduce the sugar in your cake. Specific allergies I can accommodate allergies to nuts, casein, eggs, butter and soy. If you have multiple allergies you should email to see if I can eliminate everything that you need to avoid. Because some ingredients are used as substitutes for others, I might not be able to take care of clients who have to avoid multiple food items. Corn allergies are difficult to bake for, so email me directly with the specifics if that's what you need to avoid. Gluten-Free I do NOT do gluten-free cakes, and everything that I bake does contain wheat flour. If you're severely gluten-intolerant you can go to www.3fellersbakery.com and order a cake from Susan, who has a dedicated gluten-free kitchen that produces baked products. If you just have a gluten sensitivity that isn't as severe as celiac disease, and you'd like me to decorate a cake that Susan bakes, she's willing to arrange that. Again, the decision has to be up to you. Kosher I do not have a kosher-certified kitchen! If you're looking for a certified kosher baker, I would suggest calling a synagogue that's local to your reception site and asking them if they know of someone they can recommend. |
